Junmai Daiginjo (Isehikari)

Miracle rice called Isehikari was born in Ise jingu field
in the early heisei era.
Toji also planted isehikari himself and it was grown by reducing farm chemical and using organic fertilizer.
At last we harvested the best rice. We polish the rice like diamonds.
It is milled down to a minimum of 18% size of its original size.
By using the best springwater from headwater of Nisik Riber this Junmai Daiginjo sake was made. From ancient sparrow is very familiar with Ine(rice).
We want sparrows to carry our dream.
We named this sake MUJAKU because we want to spread Japanese sake to the all over the world.
